Gouda Vintage
Vintage Gouda is matured for up to two
to three years. Little white calcium crystals might form
during the maturing and these give a crunchy bite to the
cheese.

has a nice flavour. The process of riping takes place in
a natural way.

It has a very mild flavor and is wonderful with fresh bread,

Leyden
Firm composition and texture and the addition
of cumin seeds (which are responsible for its tangy flavor
and spicy aroma) distinguish it from all other Dutch cheeses.

Maasdam
It is smooth. Natural rind is polished
and may be waxed. This cheese can br an alternative to more
expensive Swiss cheese Emmental. Although there are similarities
with Emmental, it is higher in moisture and therefore, more
supple. The flavour is sweet and buttery, with a fruity
background, making it ideal for serving as a snack or breakfast
cheese. It can also be grilled.
