Gjetost

Geitost "Yay-Toast" is a farmhouse and creamery, semi-hard cheese. It was originally made entirely from goats milk, but is now more often made with a blend of goats and cows milk. This cheese has a caramel-like taste and is dark brown in colour. It is made from the liquid whey instead of the curd. There is no ripening period. This results in a sweet, fishy, caramel flavour that is really irresistible.

It is a semi-hard cheese without holes, aged in a putty rind and it has an aromatic, piquant taste that can easily turn rather sharp.
