Bishops Kennedy
It has a disc shape with sticky, orange-yellow,
brine-washed rind. Bishop Kennedy is smooth and velvety, with
a spicy finish. When the cheese is mature, it almost runs
and virtually hums with flavour.

Dunsyre Blue
Cylinder shaped, unpasteurised, vegetarian,
blue cheese made from cow's milk. The moist, white rind has
a variety of moulds. The cheese is wrapped in foil. When aged,
the smooth, creamy-coloured interior is penetrated by chunky
streaks of blue-green mould that impart a spicy flavour.

Cheddar
Isle of Mull is made from the milk of this
part of Scotland. The cheeses is matured for up to twelve
months. The cheese has a taste of garlic and onions. It is

Lanark Blue
It has blue green veins, a strong salty flavour,
with a creamy white inside. It has a shape of cylinder wrapped
in foil. The cheese is moulded by hand and allowed to mature
for three months.

St Andrews
This cheese is easily recognised by its light
golden-orange rind. St Andrews is mild, creamy and full of
flavour, It is delicious when eaten with some chilled medium
white wine or with ham on a toasted slice of baguette topped
with a nut crust and grilled. |

Strathdon Blue
Strathdon Blue has a milder flavour than
Stilton. Serve with little oat biscuits and sliced apple or
celery sticks. It also makes wonderful tartlets with bacon
or leek.

Sharpham
Mould ripened cheese similar to Vignotte.
It has a light texture and delicate flavour if eaten young.
If left to mature it becomes richer and full-bodied. it's
delicious and creamy.
