It has a disc shape with sticky, orange-yellow, brine-washed rind. Bishop Kennedy is smooth and velvety, with a spicy finish. When the cheese is mature, it almost runs and virtually hums with flavour.

It has a shape of chubby log rolled in oatmeal. The cheese is made with cream-enriched milk, and it is buttery. The toasted oats give it a nutty, yeasty flavour. It is a table cheese which is spread on oat cakes.

Dunsyre Blue

Cylinder shaped, unpasteurised, vegetarian, blue cheese made from cow's milk. The moist, white rind has a variety of moulds. The cheese is wrapped in foil. When aged, the smooth, creamy-coloured interior is penetrated by chunky streaks of blue-green mould that impart a spicy flavour.

This cheese is easily recognised by its light golden-orange rind. St Andrews is mild, creamy and full of flavour, It is delicious when eaten with some chilled medium white wine or with ham on a toasted slice of baguette topped with a nut crust and grilled.
